Coconut Lime Sour Bars
I am sharing the recipe from the Barn House bake contest. I won first place! Woo Hoo!
Coconut Lime Sour Bars
Crust:
2 C flour
4 T sugar
1/8 tsp salt
1 stick plus 2 1/2 T butter
Mash together (dry, but holds together). Pour into 13x9 baking dish. Press into pan as evenly as possible. Bake at 350 degrees for minutes.
Filling:
4 eggs
1 C chopped almonds
3 C coconut flakes
1 1/2 C brown sugar
Mix and spread over hot baked crust. Bake 30 more minutes.
Glaze:
4 T lime juice (2 limes)
1 1/2 C powder sugar
2 tsp lime zest
glaze while HOT. Work quickly.
I usually add a little bit more lime juice to thin the glaze a bit.
ENJOY!

Finally.... I'm a blogger! Hopefully... Maybe... well, we'll see how it goes!
So! We just finished Barn House Flea Market. It was so much fun! Zoe sold water and snacks at the entrance. I forgot to take a picture of her at her booth! Oh well! Zeb and Hattie helped me get ready for the show. They are fabulous painters! Now we are getting ready to move to a new house! busy busy!
